Deer Chili: The Reward for a Season Well Spent

Deer Chili: The Reward for a Season Well Spent

Oct 21st 2026

There's a moment after a good hunt when the work isn't done, but the best part is still ahead. The deer is processed, the freezer is stocked, and you're standing in the kitchen with a pound of burger and a pound of sausage, ready to turn all that effort into something worth sitting down for. This deer chili is tried and true, with plenty of compliments and no complaints.

What You'll Need
This recipe comes together with simple ingredients, most of which are probably already in your pantry.

  • 1 lb deer hamburger
  • 1 lb deer sausage
  • 1 medium yellow onion, diced
  • 1 green bell pepper, diced
  • 2 to 3 tablespoons garlic, minced
  • 1 (14.5 oz) can petite diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 1 (10 oz) can Rotel
  • 1 can pinto beans
  • 2 cans chili beans
  • 1 cup beef broth
  • 1 tbsp brown sugar

The Spice Blend

  • 2 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 1 tsp garlic powder

Step One: Brown the Venison
Brown the deer hamburger and sausage in bacon grease over medium-high heat until cooked through. The bacon grease adds a little richness that lean venison needs, and it builds a great flavor base from the start.

Step Two: Add the Veggies
Add the onion, bell pepper, and garlic to the pot. Cook until softened, about 5 minutes.

Step Three: Toast the Spices
Stir in all of your spices and let them toast for about 30 seconds. You'll smell the difference right away.

Step Four: Build the Chili
Add the diced tomatoes, Rotel, tomato sauce, and all of your beans. Pour in 1 cup of beef broth, add the brown sugar, and stir everything together well.

Step Five: Simmer Low and Slow
Let it simmer on low for 30 to 45 minutes, adding more broth if it gets too thick. The longer it sits, the better it tastes.

  • Crushed crackers or cornbread on the side
  • Diced onions and jalapeños for extra kick
